Mexican Street Corn

Marinade (this is enough for 5 pieces of corn) 


Juice of two limes


1/4 cup avocado mayo (my favorite is chosen foods)


3 TB roughly chopped cilantro (just omit if you don’t like it)


2 tsp minced garlic


1 TB ghee


1/3 cup cojita cheese


1 tsp Weber chili lime rub 

Shuck and clean your corn and then rub marinade into each piece. You will really want to rub the cheese in between the kernels. Wrap in foil and grill. For our grill we set it to medium and it took approximately 25 minutes turning it every 5-6 minutes.
