Zucchini Boat Tacos

I had a request from a friend for some health Cinco de Mayo recipes. Here are some fun and creative tacos that are super easy to make, healthy, and delish!

1. Preheat the oven to 350 degrees.
2. Cook ground turkey or ground beef on stove top. I added Weber Chili Lime Seasoning to mine for a little kick but you could easily use whatever fajita meat seasoning you prefer!
3. Make the refried black beans (If you prefer to just buy canned refried black beans you can skip this step. I know that Trader Joe's sells them, but I have included my recipe in case you want to make them)
REFRIED BLACK BEANS:
Add one 10 oz. can of diced tomato with green chili peppers (keep the liquid) to a skillet and let simmer for 5 minutes.
Add one diced onion and let simmer for 5 minutes.
Add one can of black beans with no liquid and let simmer for 5 minutes.
Add last can of black beans with half the liquid and let simmer for 5 minutes.
Mash to desired consistency (I like to leave mine a little chunky) and then return to heat and stir consistently on low heat for 3 minutes. The beans will thicken as they cool.

4. Cut the zucchini length wise and scoop out the inside.

5. Set the zucchini boats on a tray or bakeware safe dish and pre-roast the oven for 5 minutes at 350 degrees.
6. Remove from the oven and add refried black beans, ground meat, and cojita cheese (I found that order works best).
7. Bake the loaded zucchini boats for 15 minutes at 350 degrees. Remove and top with tomatoes, avocado, and cilantro.
