Collard Green Wraps

So who knew that collard greens were such great alternatives to tortillas? I love these especially since I am gluten free because its very difficult to find gluten-free wraps that are healthy and affordable. Plus, if you aren't gluten free these are still a much healthier option!

To prepare the collard wraps you are first going to have to trim and blanche the leaves. I have included pictures below. Although it is not challenging, I figured it would help to see pictures of what I am talking about (especially if you are new to blanching).

First, you are going to want to slice the stems of your collard greens off on a diagonal like so....

Next, get a pan and put 1-1 1/2 inches of water in it. Bring it to a boil. Now you are going to drop a collard leaf in it for 30 seconds and then immediately transfer it to a pan with cool water (this is blanching).

Now you can dry your leaves and you're ready to start wrapping!

In my wrap, I used a sauce made with 1 TB tahini, 1 TB dijon mustard, and 1 tsp lemon juice as my base. Then on top I added shredded carrots, shredded grilled chicken, diced celery, and fire roasted red peppers. The great part is that the possibilities are endless, just use them like a tortilla.

Cinco de Mayo is rapidly approaching and these could be a wonderful way for you to have that cheesy stuffed burrito full of goodness in a slightly healthier way!
