Quinoa Sweet Potato Black Bean Burgers

I have never been a huge red meat fan but I love the idea of burgers, especially in the summer. These black bean burgers are fabulous and are full of fiber and nutrients. I love topping mine with fresh avocado, pico de gallo, and feta cheese!

Ingredients:

- 1 1/3 cup quinoa (cooked)

- 1 can black beans (drained and rinsed)

- 2 medium sized sweet potatoes (peeled, cubed, and boiled)

- 1 red pepper (diced)

- 1 Tbs. Psyllium Husk Powder (optional)

- 2 eggs (beaten) (feel free to sub a flax egg if you are vegan)

 

1) Cook 1 cup quinoa according to bag instructions.

2) Peel and cube 2 medium sized sweet potatoes. Boil them on high for 12 minutes or until easily pierced with a fork.

3) Transfer boiled potato chunks to a bowl and mash until they are a smooth consistency.

4) Add quinoa and drained black beans to the potatoes and continue to mash until well mixed.

5) Mix in the diced pepper, psyllium (optional), and the two beaten eggs.

Roll mixture into burger patties (it should be sticky) and cook either in the skillet or on the griddle (375 degrees) for 10-12 minutes a side or until golden brown and crispy.
